The national dish of spicy fermented vegetables is served with almost every meal in Korea, and in celebration of it, the 19th Gwangju International Kimchi Culture Festival opened Saturday in the southwestern city of Gwangju.
The theme of this year's festival is, "The World Loves to Say Kimchi".
Kimchi is made with a variety of seasonings and comes in a variety of shapes and sizes to satisfy one's tastebuds.
Visitors to the festival have the chance to learn more about Korean culture and even the history of kimchi at the Five Senses Kimchi Museum.
Recent innovations and fusion versions of kimchi are also on display.
At the kimchi making workshop, visitors can not only make their own kimchi in a traditional manner, they can take home what they make.
Many foreigners were intrigued by the process.

[Interview : ] "We came to the kimchi festival because it is such an important part of Korean culture, so we wanted to be able to make it and its been such a great experience so far and it is absolutely delicious".

At the open market visitors can purchase different types of kimchi and even get a sample taste before they buy.
Even better, most of the kimchi is made right before your eyes.

Kimchi is not only popular in Korea but all over the world. Just last month a kimchi conference was held in Washington D.C to great success.

[Interview : ] "We were surprised by the results from the Washington conference. We exported 50 tons of Gwangju kimchi, and in the future we plan to export not only to the U.S. but Europe as well".

[Reporter : ] "The 19th Gwangju International Kimchi Culture Festival runs through October 17th and is open to the public. Visitors can experience a special part of Korean culture while trying the nation's most popular fermented dish.
